The Best Black Bean Brownies, Even Your Kids Will Love Them!
I first discovered Black Bean Brownies a few years ago when my sister-in-law was diagnosed with a gluten allergy. I was the unofficial “dessert maker” of the family & was on the quest to find a recipe she could eat & enjoy. That is when I happened upon Black Bean Brownies. Sounded completely crazy to me at first, seriously- how could BLACK BEANS be good in BROWNIES???? Anyone else thinking this exact same thing?
As I began doing more research on gluten, I realized there are many negative side effects that can occur when you eat a high-gluten diet. For me personally, and for many others (women especially), too much gluten in our diet means a bloated belly, which NOBODY wants! I haven’t gone completely gluten-free, but I am working on lowering the amount we eat on a daily basis- let’s just say it is a slow process. LOL.
I have tried several different recipe’s & FINALLY, after much tweaking, I think I have found the perfect combination that you (and your kids) will LOVE! These are a favorite in our home, and I am sure they will soon be a favorite in your’s as well. Enjoy 🙂
The Best Black Bean Brownies
Prep Time: Roughly 15 minutes. Bake Time: 15-22 minutes.
Preheat oven to 375˘ & lightly grease or spray a 9″ x 13″ pan.
What you will need:
- 1 Can of Black Beans, Drained & Rinsed (16 oz)
- 1/2 Cup REAL Maple Syrup
- 1/2 Cup Coconut Oil, Melted
- 1 TB Earth Balance or Butter
- 2 tsp Vanilla
- 1 TB Flaxseed mixed into 1/4 Cup warm Water until “eggy” (or use 1 egg)
- 1/2 Cup Water
Blend with hand mixer or in food processor until smooth.
Add in:
- 3/4 Cup Oat flour
- 1/2 tsp Salt
- 1/2 tsp Baking Soda
- 2 TB Baking Powder
- 1/2 Cup Cocoa Powder
Combine ingredients & mix together until smooth like brownie batter. Pour into your prepared pan and bake for 15-22 minutes or until fork comes out clean. Allow to cool before cutting, grab a glass of milk (or coffee, if you prefer) & ENJOY!
Optional Add-ins:
- Chocolate chips 1/2 cup
- Crushed Walnuts 1/2 cup
- Sprinkle top with Powdered Sugar after baking
